Happy World Vegan Day! Today, we’re celebrating this special day by sharing a delicious plant-based Spinach and Artichoke Dip recipe with you. This dip is served at Sci-Fi Dine-In Theater Restaurant at Disney’s Hollywood Studios and is made with plant-based cheese substitutes and oat milk and served with house-made chips. This delicious dish makes a wonderful appetizer to share with friends and family for any occasion.
I love the vegetables in this recipe – spinach, artichokes, red bell pepper, and cauliflower! The cauliflower blended with the plant-based cheese makes this dip nice and creamy. As a lover of spinach and artichoke dip myself, I can honestly say this is one of my favorites. If I hadn’t made it, I wouldn’t have known the cheeses were all plant-based.
When I tested this, I found there were extra cauliflower florets and red bell pepper left over, so I used them as dippers – and they were great! Tortilla chips, pita chips, and carrot sticks make fantastic dippers as well. One quick note for the home cook: plant-based cheese spreads, like the one used in the recipe, all have different water contents. Slowly add the oat milk to get the desired texture on your dip.
This is a great dish to bring to a gathering of plant-based friends and will also be enjoyed by friends who don’t follow a plant-based diet. Let’s get to the recipe!
PLANT-BASED SPINACH ARTICHOKE DIP Sci-Fi Dine-In Theater Restaurant Disney Hollywood Studios
Serves 4
PANKO TOPPING
1 cup panko-style breadcrumbs
1 cup grated plant-based Parmesan-style cheese substitute
1 tablespoon freshly chopped parsley
PLANT-BASED SPINACH ARTICHOKE DIP
1 tablespoon water
1/4 cup chopped Spanish onion
1/4 cup chopped cauliflower
2 teaspoons canola oil
1 teaspoon chopped garlic
1 1/4 cups vegan chive cheese
Oat milk, as needed
1 cup tightly packed baby spinach leaves
1/2 cup chopped canned artichokes
1/4 cup diced red bell pepper
1 teaspoon Tajin seasoning
DIPPERS
Red pepper strips
Cauliflower florets
Carrot sticks
Pita chips
FOR PANKO TOPPING:
Preheat oven to 350ºF. Line a baking sheet with parchment paper.
Stir breadcrumbs and plant-based Parmesan-style cheese on baking sheet. Bake for 5-7 minutes, stirring once, until golden brown.
Cool for 10 minutes. Add fresh parsley and set aside.
FOR PLANT-BASED SPINACH-ARTICHOKE DIP:
Combine water, onion, and cauliflower in a small food processor. Purée until smooth; set aside.
Heat canola oil in a small skillet over medium heat for 5 minutes. Add chopped garlic and puréed cauliflower and cook for 3 minutes. Add plant-based chive cheese and cook, stirring constantly for 5 minutes, until cheese is melted. If dip is too thick, add 1 tablespoon of oat milk at a time and thin to desired consistency.
Add spinach, artichokes, and red bell pepper. Cook for 4-5 minutes, until spinach is wilted, and artichokes are warm. Season with Tajin.
Keep warm until ready to serve.
TO SERVE:
Pour warm spinach-artichoke dip into a small bowl. Sprinkle panko topping on top and serve with vegetables and pita chips.
Always use caution when handling sharp objects and hot contents. Please supervise children who are helping or nearby.
This recipe has been converted from a larger quantity in the restaurant kitchens. The flavor profile may vary from the restaurant’s version.

Hello foodies! In case you missed it – last week we launched Disney Eats here on the Disney Parks Blog with a new look and topics page for everything and anything to know about food and beverage. And today, I’m thrilled to share some exciting news through this new brand.
In our latest Disney Eats series Best Bites story, there are three, yes three, restaurants getting some exciting updates in the coming weeks – Tusker House Restaurant at Disney’s Animal Kingdom Theme Park, Kona Cafe at Disney’s Polynesian Village Resort, and Akershus Royal Banquet Hall at EPCOT.
These favorite foodie spots offer unique dining experiences and delicious cuisines that take your taste buds to different cultures across the globe. Not to mention, you may even find some of your favorite characters at two of them.
Beginning Nov. 1, Tusker House Restaurant will be transitioning to an all-you-care-to-enjoy, buffet style dining experience! That means you can go and grab all the food you can handle. What makes this spot nestled in the Harambe Marketplace so special is its menu filled with African-inspired flavors.
There are plenty of dishes to keep your eye (and taste buds) on when this location goes back to a buffet. From breakfast to dinner, you will be more than satisfied. Kickstart your morning at Disney’s Animal Kingdom Theme Park with tasty plates, including an assortment of pastries like the Zebra Coffee Cake, breakfast classics like Simba Waffles and Mickey Waffles, and a variety of breakfast meats.
For lunch and dinner, you can indulge in various breads and dips, house specialties like the Spit-roasted Tandoori Chicken and Green Curry Shrimp, plant-based options including the Cauliflower Bunny Chow, and various salads. There are also some classics for the little ones to enjoy like corn dog nuggets and macaroni and cheese to name a few. And don’t worry – there are plenty of desserts to enjoy too!
This adventurous spot not only has mouthwatering eats, but Donald Duck and some of his Disney pals have taken a break from their safari adventure to celebrate with you. Be sure to get a picture and a hug from the gang as they venture around the dining room. Plus, what could be better than characters and food?
Over at Disney’s Polynesian Village Resort, the delicious Kona Cafe will soon be returning from its recent refurbishment. Beginning Nov. 1, you can once again dine at this favorite restaurant but now with a refreshed experience. The look, feel, and even some flavors of this relaxed café will be different, yet familiar. Kona Cafe will feature American cuisine with that Asian flare that makes it so unique and you can still watch the chefs at work in the onstage sushi kitchen.
There are breakfast favorites that have cemented their place on the menu, including the delicious and can’t-miss Tonga Toast and Pineapple Macadamia Nut Pancakes served at breakfast. These two are fan-favorites for a reason. Just take a peek at how tasty they look! Be sure to keep an eye out for several items returning to the menu like the Big Kahuna Burger and Seafood Pu Pu Platter and even a new plant-based offering for dinner, the Sautéed Red Quinoa.
Lastly, I cordially invite you to feast at Akershus Royal Banquet Hall, which will open its doors once again on Nov. 4. This dining experience is found at the Norway pavilion in the World Showcase at EPCOT and gives guests a taste of Norwegian cuisine.
There are plenty of plates at this royal feast, whether you’re looking to indulge in your favorites or wanting to try something new. This family-style dining experience includes Traditional KjØttkaker featuring Norwegian meatballs or the Kylling og Melboller, a Norwegian take on chicken and dumplings. If you’re looking for some more classic American-cuisine, they’ve got that too with Mashed Potatoes and Gravy, Grilled Salmon, and Macaroni & Cheese. And what meal is complete without dessert. The meal serves up both a Rice Cream with strawberry sauce and a Chocolate Roulade with lingonberry cream – yum!

It’s finally fall in Florida!! While it may be a little different than it is in other parts of the country, fall in Florida is fun – especially at Walt Disney World Resort!
We all have our must-have treats at EPCOT. One of those treats is the Jumbo Pretzel from Sommerfest, but often find debating between sweet and savory treats at the parks. The Pretzel Bread Pudding is on the menu at this favorite spot and thankfully, the culinary team was willing to share the recipe.
The Pretzel Bread Pudding features pieces of jumbo pretzels and is topped with house-made vanilla sauce and caramel. It’s the perfect dessert for anyone who loves the sweet and savory combination.
This dish was so fun to test. I love desserts that taste like they’re time-consuming but are actually easy to make, and this is one of those desserts. EPCOT uses the delicious Jumbo Pretzels they sell in the park to make this dessert, but I recreated this using pretzel bread that is easily found in grocery stores. I made the vanilla sauce and mixed up the Pretzel Bread Pudding in the morning, then baked it for dessert. The taste testers all loved it warm, straight out of the oven. It also reheats well for breakfast the next morning (if you have any leftovers).
Now that I’ve talked about this amazing recipe, it’s time to share it with you. Be sure to plan ahead on this one because it needs to rest in the refrigerator for at least 4 hours so that the pretzel bread can fully absorb the liquid.
If you make this delicious dessert at home or have a chance to enjoy it at EPCOT, be sure to share and include #DisneyEats!

We hope you’re ready to learn about what’s cooking over at Disney’s Wilderness Lodge because this resort has some exciting, and delicious, updates at two of its locations – Territory Lounge and Roaring Fork. Both of these spots are getting some new additions to their menus, and trust us, they won’t disappoint.
Let’s kick things off at Territory Lounge where, starting today, the menu is entering a whole new territory filled with delicious eats and sips that will leave you coming back again and again. This hidden gem found within Disney’s Wilderness Lodge showcases shareable dishes highlighting tasty flavors, but with an elevated and fun twist.
If you love popcorn, the Territory Popcorn Sampler features the chef’s take on popcorn with spicy, caramel, sea salt, truffle, and BBQ flavors. The Artisanal Cheese and Charcuterie isn’t your average charcuterie board – you have to see it to believe it! Chef Brian Knox carefully selected Oregon and Utah cheeses with a focus on smokey notes and even a cheese wrapped in honey and sea salt – accompanied by fresh honeycomb, pickled vegetables, and handcrafted bread.
There are also some flavorful flatbreads new to the menu. The Loaded Baked Potato Flatbread is topped with bacon, potato, chive cream cheese, and crème fresh while the Salmon Run is topped with an in-house dill-cured gravlax salmon with truffle cream cheese, fried capers, onions, black sea salt, and dill. Now those are some bites to fuel you up for any expedition!
Rounding out the new menu items are the Bacon on the Wire and the Bone and Brie. The Bacon on the Wire takes a new meaning to an elevated dish with black pepper candied bacon cured in smoked paprika and bourbon, cold smoked, and roasted perfectly with a bourbon glaze. And, it doesn’t just have bacon; it features deviled eggs topped with fried shrimp, chipotle beef jerky, and salmon candy with a bourbon drizzle.
The Bone and Brie will leave you wanting to devour every last bite on this foodie adventure. With roasted bone marrow, honey-baked brie baked in a cast iron skillet with marionberry onion jam, this shareable dish is a must-try.
In addition to these mouthwatering eats, there are new hand-crafted beverages joining the menu for those over 21 looking to indulge. The National 95, a coast-to-coast twist on the classic French 95 cocktail, combines Whistle Pig Rye from the East coast with simple syrup, and sparkling Argyle Brut from the West coast while the Lewis and Clark-inspired L&C G&T features Fords Gin, St. Germaine, and elderflower tonic, garnished with a cucumber ribbon and fresh flower.
If you’re interested in fruity flavors, there’s a few options for you too! The Orchards Bounty is made up of Ketel One Peach & Orange Blossom Botanicals vodka, house-made pinot gris syrup, Dolin Blanc vermouth, and Aperol. Sangria fans will love the Orange Spiced Sangria, a drink with Chateau Ste Michelle cabernet, Cointreau orange liqueur, apple cider, and house-made orange spice syrup. The Northwoods masterfully brings together Bulleit Rye, house-made rosemary syrup, citrus juices, and maple into one delicious cocktail.
For a campfire feel on a classic cocktail, the Smores Old Fashioned has Elijah Craig bourbon, toasted marshmallow syrup, and chocolate bitters garnished with perfectly toasted marshmallows – yum! And finally, the Timeless Elias is a smoking libation featuring Macallan 12 yr. scotch, house-made vanilla bean syrup, and Courvoisier VSOP.
As you can see, the Territory Lounge is bringing its best to the foodie game and taking you on a culinary journey out west through your taste buds with all these new and exciting items!
Beginning on October 11, Roaring Fork is also getting some tasty new treats that you are definitely going to want to try. Kickstart your day with one of the new breakfast options. The Meat and Potatoes Quiche with broccoli, potatoes, bacon, ham, and gouda and the Vegetable Lover’s Quiche with peppers, onions, leeks, green peas, potatoes, broccoli, fresh herb, and cheddar are delicious options to fuel up on before your adventure. For some sweet starts, indulge in the Warm Freshly Baked Cinnamon Roll with fresh blueberries and blueberry cream cheese frosting or the extra-large Warm Grizzly Bear Claw with mixed nuts and raisin filling.
As the day moves onto lunch and dinner, there are some more items recently added that you need to taste. The Asian-Style Noodle Salad is quite refreshing with tofu, mixed vegetables, crispy rice noodles, and fried wontons. You can even add chicken or shrimp for some added protein! The Heirloom Tomato Salad with pickled wild mushrooms, burrata cheese, red pepper pesto, and basil is also a tasty, lighter option.
If you’re looking for a heartier dish, I’ve got two more for you. The Country-style Baked Meatloaf features buttery green peas, chunky mashed potatoes, and gravy for a classic meal. The Barbecued Brisket and Burnt Ends with potato hash, fiery coleslaw, and cornbread features some comfort BBQ fare packed with flavor.
Now, if you’re like me and have a love of sweets, there are quite a few desserts available all day long that are joining Roaring Fork’s repertoire. The Almond Walnut Bundt Cake is a must with a coffee glaze and cream cheese icing. If you’ve got a taste for blueberry, the house-made Blueberry Thyme Crumb Pie is a seasonal item that will change flavors throughout the year, so you can keep coming back. The adorable Bear Mousse Cake brings together raspberry mousse, almond cake, and dark chocolate ganache into a treat that is almost too cute to eat – almost.
Lastly, Humphrey the Bear has a passion for honey and the new Humphrey Bee Hive Cake is the perfect sweet eat for him. This delightful dish is made with chocolate cake, passionfruit mousse, sugar bees, and a white chocolate Humphrey on top.
We can’t wait to take a journey over to Disney’s Wilderness Lodge to indulge in all the goodies coming to both Territory Lounge and Roaring Fork. We sure hope you’re as excited as us!
