Our first soup from the Disney Recipe Vault is the Curry, Carrot, and Apple Soup from Disney Cruise Line. Apples and carrots add just the right amount of sweetness to the curry powder. To enjoy a plant-based version of this recipe, use your favorite plant-based yogurt alternative to top the soup.

CURRY, CARROT, AND APPLE SOUP

Disney Cruise Line

Serves 4

INGREDIENTS

1/4 cup vegetable oil

1 tablespoon plus 1 teaspoon curry powder

1 cup diced carrots (about 4 medium carrots)

1 medium onion, chopped

2 Granny Smith apples, peeled and chopped

4 cups vegetable broth

1 whole carrot

Coarse salt, freshly ground black pepper, to taste

Plain yogurt, fresh parsley, for garnish

DIRECTIONS:

  1. Heat oil in a large, heavy bottomed pot over medium heat. Add curry powder and cook, stirring, for 2 to 3 minutes. Add diced carrots, onions, and apple, and stir until coated with curry powder. Sauté for 5 minutes, stirring constantly.
  2. Stir in broth and cover. Bring to a boil, reduce heat and simmer, stirring occasionally, until carrots and apples are very soft, about 20 to 25 minutes.
  3. While soup cooks, preheat oven to 400°F. Peel whole carrot and shave into very thin curls. Roast for 3 to 5 minutes, or until ends are browned and crisp. Remove from oven and set aside.
  4. Remove soup from heat and purée in a blender, or with a hand-held immersion blender. Season with salt and pepper.
  5. To serve, top each bowl with a dollop of yogurt, roasted carrot curls, and parsley.

If you’re looking for a creamy and filling soup full of flavor, this is the perfect soup for you. Frying the tortilla strips for the top is worth the extra time and adds a delicious crunch. Although this dish is no longer on the menu, there are still plenty of treats to enjoy at Fiddler, Fifer & Practical Cafe.

INGREDIENTS

5 yellow corn tortillas, cut into thin strips

1/4 cup vegetable oil, plus 2 tablespoons, divided

1 yellow onion, chopped

1 tablespoon finely chopped garlic

1 red bell pepper, chopped

1/2 cup corn

5 cups chicken stock

15-ounce can tomato puree

1/2 teaspoon coarse salt

1 1/4 teaspoons chili powder

1/4 teaspoon freshly ground black pepper

1 1/4 teaspoons sugar

3/4 teaspoon hot sauce

1 teaspoon Worcestershire sauce

4 teaspoons flour

1/2 cup water

2 1/2 cups shredded cooked chicken

1/2 cup heavy cream

1/4 cup sour cream

1 cup shredded mild cheddar cheese

1/2 cup black beans, drained and rinsed

1/4 cup chopped fresh cilantro

DIRECTIONS:

  1. With caution, heat 1/4 cup vegetable oil in a 10-inch skillet. When oil is hot, carefully add tortilla strips and stir until golden and crisp, 2 to 3 minutes. Drain on paper towels and set aside.
  2. Cook onion in remaining 2 tablespoons oil in a medium saucepan over medium heat until translucent. Add garlic, bell pepper and corn; cook for about 2 minutes.
  3. Stir in chicken stock, tomato puree, salt, chili powder, pepper, sugar, hot sauce, and Worcestershire sauce; bring to a boil. Lower heat and simmer for 15 minutes.
  4. Whisk flour and water in a small bowl and stir into soup. Bring to a boil, then simmer 4 minutes.
  5. Add chicken and bring back to a simmer. Stir in cream, sour cream, shredded cheese, and black beans.
  6. To serve, garnish with reserved fried tortilla strips and cilantro.

Another favorite recipe from the Disney Recipe Vault is Loaded Baked Potato Soup from Carnation Café at Disneyland park. Baked potato soup is a fantastic comfort food and the tasty toppings make it a fun soup to eat and serve. To keep the potatoes from turning brown, soak diced potatoes in cold water until ready to use and drain before using. Freezing the bacon for 20 minutes makes it easier to chop too.

Serves 6

INGREDIENTS

1 pound bacon, roughly chopped

1 medium yellow onion, diced

1 large carrot, peeled and diced

3/4 cup diced celery

4 large russet potatoes, peeled and diced

4 medium red potatoes, diced

1/4 cup flour

2 cups chicken or vegetable stock

Coarse salt, freshly ground pepper, to taste

4 cups heavy whipping cream

Optional garnishes: chopped chives, reserved chopped bacon, sour cream, shredded cheddar and Monterey Jack cheese

DIRECTIONS:

  1. In a 6- to 8-quart stockpot over medium heat, fry bacon until crisp.
  2. Remove bacon with slotted spoon and drain on paper towels (reserve half for garnish). In the bacon fat, cook onions, carrots, and celery until the onions are translucent. Add potatoes and cook for 4 minutes, stirring occasionally.
  3. Whisk in flour and stir constantly over low heat until the flour is cooked and the mixture has thickened slightly, about 5 to 7 minutes.  Add chicken stock and half of the bacon. Season with salt and pepper.
  4. Over medium-high heat, bring the soup to a simmer and cook for 25 minutes or until the potatoes are soft. Mash some of the potatoes for thicker, creamier texture. Add whipping cream and simmer for 5 minutes.
  5. Adjust thickness by adding water or stock. Soup should have a creamy consistency.
  6. Season to taste, and garnish with toppings.

2 tablespoons olive oil

1 pound ground turkey breast

1 teaspoon seasoning salt

1/4 teaspoon freshly ground black pepper

1/2 cup diced carrots

1/2 cup diced celery

1/2 cup diced onion

1 tablespoon minced garlic

16 ounces chicken stock

15 ounces tomato sauce

2 cups finely diced fresh tomatoes

1 teaspoon Worcestershire sauce

1 dried bay leaf

1/2 teaspoon dried oregano

1 cup cooked elbow macaroni noodles

6-ounce bag baby spinach

DIRECTIONS:

  1. Heat oil in a large saucepan over medium heat. Add turkey, seasoning salt, and pepper. Cook, crumbling turkey into small pieces, 5 minutes, or until golden brown. Add carrots, celery, onions, and garlic; cook until onions are translucent, about 3 minutes.
  2. Stir in chicken stock, tomato sauce, diced tomatoes, Worcestershire, bay leaf, and oregano; simmer, covered, 30 minutes
  3. Add noodles and spinach just before serving, stirring to wilt spinach.

IMPOSSIBLE ITALIAN SAUSAGE

1 pound plant-based ground meat substitute

2 tablespoons paprika

1 tablespoon fennel seed

1 tablespoon coarse salt

2 teaspoons dried oregano

2 teaspoons granulated garlic

1 tablespoon anise seed

1 teaspoon crushed red pepper

SAUSAGE AND KALE SOUP

1 tablespoon olive oil

Impossible Italian sausage

1 medium onion, diced

3 cloves garlic, minced

1 cup white wine

6 small red potatoes, diced

1 tablespoon chopped fresh oregano

6 cups vegetable broth

3/4 cup dairy-free cooking cream

2 tablespoons water

2 tablespoons cornstarch

1 bunch (1/2 pound) kale, chopped

1/4 cup sherry vinegar, plus more, to taste

Coarse salt, to taste

Freshly ground black pepper, to taste

TOPPINGS

1 cup plant-based pesto

8 toasted flatbread crackers

FOR IMPOSSIBLE ITALIAN SAUSAGE:

  1. Combine plant-based ground meat substitute, paprika, fennel seed, coarse salt, oregano, granulated garlic, anise seed, and crushed red peppers in a medium bowl. Mix until season is fully incorporated into meat substitute.
  2. Refrigerate until ready to use.

FOR SAUSAGE AND KALE SOUP:

  1. Heat olive oil in a large pot or Dutch oven over medium heat for 5 minutes, until hot. Add reserved Impossible Italian sausage and cook, stirring occasionally, for 8-10 minutes, until fully cooked.
  2. Add onion, garlic, and red pepper flakes and cook for 5 minutes, until onions begin to soften. Add white wine and cook for 2 minutes, making sure to scrape any browned bits of sausage from the bottom.
  3. Add potatoes, oregano, and vegetable broth. Bring to a boil, cover, and reduce to a simmer for 10-15 minutes, until potatoes are soft. Add dairy-free cooking cream and stir until incorporated.
  4. Combine water and cornstarch in a small bowl. Bring soup to a boil and slowly add cornstarch mix. Simmer for 5 minutes, stirring often, until soup is slightly thickened.
  5. Add chopped kale and stir until wilted. Add sherry vinegar.
  6. Season with additional sherry vinegar, salt, and pepper, to taste.

TO SERVE:

Ladle soup into bowls. Top with 1-2 tablespoons of pesto and garnish with a toasted flatbread.

INGREDIENTS

2 tablespoons olive oil

2 tablespoons butter

3 cups fresh corn kernels

1/4 cup finely diced onion

1/4 cup thinly sliced leeks

1/4 cup finely diced celery

1/4 cup finely diced carrot

2 tablespoons minced shallot

1 fresh bay leaf

1 teaspoon chopped fresh thyme

1 teaspoon minced garlic

1 cup seafood stock

3 cups heavy cream

1/4 cup lump crabmeat, for garnish

4 teaspoons chopped fresh chives, for garnish

DIRECTIONS:

  1. Heat oil and butter together over medium heat in a large saucepan.
  2. Add corn, onions, leeks, celery, carrots, and shallots. Cook 5 to 8 minutes, stirring until soft.
  3. Add bay leaf, thyme, and garlic; cook until fragrant, about 1 minute. Add stock and bring to a simmer.
  4. Add cream, bring to a simmer, then reduce heat to low and cook soup 30 minutes until the liquid reduces slightly and vegetables get very soft. Remove from heat. Carefully remove bay leaf.
  5. Purée with an immersion blender or add soup in small batches to a blender and puree until smooth.
  6. Pour through a fine-mesh sieve. Keep warm until ready to serve. Garnish each bowl with a tablespoon of crabmeat and a teaspoon of chopped chives.

One of the oldest recipes in today’s roundup, this soup is from King Stefan’s Banquet Hall, a restaurant that once served guests in the location now known as Cinderella’s Royal Table. If you’re feeding a crowd, this recipe is easily doubled.

BEEF AND BARLEY SOUP

Serves 4

INGREDIENTS

1 tablespoon vegetable oil

1 pound beef chuck, cut into 3/4-inch pieces

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/2 cup chopped onions

1/2 cup diced celery

1 cup diced carrots

1 tablespoon minced garlic

1 teaspoon dried thyme leaves

4 cups reduced-sodium beef broth

1/2 cup uncooked medium pearled barley

1/ 4 cup chopped scallions, for serving

DIRECTIONS:

  1. Heat oil in a large pot or Dutch oven.
  2. Season beef with salt and pepper and cook over medium-high heat, stirring occasionally, until browned. Remove with a slotted spoon and reserve.
  3. Add onions, celery, carrots, garlic, and thyme to the pot and cook over medium heat, stirring occasionally, until vegetables start to brown.
  4. Return beef to pot and add broth. Bring to a boil, lower heat, and simmer 45 minutes to 1 hour, or until beef is tender.
  5. Add barley and simmer 30 minutes more. Season to taste with salt and pepper.
  6. Serve in a deep bowl topped with scallions.

February is Black History Month and to celebrate, the culinary teams at Disney Parks are bringing on the flavor with delicious eats and sips honoring Black heritage and culture. Both Walt Disney World Resort and Disneyland Resort are joining in on the Celebrate Soulfully festivities, and let us tell you, they did not disappoint with this tasty lineup.

All throughout the year you can enjoy music, food, and artwork celebrating Black cultures at Disney Parks, but during February, there’s even more fun for you (and your stomach) to enjoy! Don’t forget to check out Cooking With Soul for more ways to celebrate.

This year, there are plenty of new delights that you won’t want to miss, including the Sweet Potato Fries Poutine at Disneyland Hotel. But that’s not all. There’s also some returning favorites coming back, like the Sweet Potato Lunch Box Tart at Woody’s Lunch Box and Banana Pudding at Regal Eagle Smokehouse: Craft Drafts & Barbecue.

It’s an exciting time at the Disneyland Resort, and we’re here to give you the latest reveals on what’s next for Downtown Disney District! Through this innovative evolution, we are continually looking to bring you new experiences and even more ways to make memories with a dose of Disney magic.

First Look at Parkside Market!

Here’s a first look at renderings for the new Parkside Market, a curated collection of four diverse culinary concepts from Levy Restaurants, all under one roof, as part of the expansion of the district on the west end. Parkside Market will bring Seoul Sister, a fast-casual modern eatery that will serve a Korean-forward menu based on bibimbap (Korean rice bowls); Sip & Sonder serving lattes, fresh treats, frozen drinks and Caribbean-inspired bites; GG’s Chicken Shop with chicken sandwiches, salads, and classic dinner table sides; and a second story bar with great views of the district to sip signature craft cocktails and mocktails paired with tantalizing appetizers.

Earl of Sandwich News!

Earl of Sandwich fans, great news! Plans are in the works for an all-new, two-story location in Downtown Disney District, with a quick-service Earl of Sandwich shop on the ground level and a table-service gastropub upstairs. We can’t wait to share more details about this project in the future.

In the meantime, keep an eye out for a temporary Earl of Sandwich pop-up opening soon near Star Wars Trading Post. Here, you will be able to pick up sandwiches such as The Original 1762, The Full Montagu or my personal must-have, the Holiday Turkey, as well as hand-crafted wraps, salads and sweets.

Earl of Sandwich will be relocated from its temporary location on the east end of the district near the Esplanade to make way for the design and construction of an all-new Porto’s Bakery.

Sneak Peek at Paseo and Céntrico, and Announcing Tiendita!

Next, let’s take a sneak peek at what’s coming to the center of the district later this spring – the new Paseo and Céntrico – and announcing, Tiendita! With menus created by Michelin-starred Chef Carlos Gaytán, the Paseo upstairs dining room and the first floor Céntrico courtyard bar and restaurant will offer upscale Mexican cuisine and tequila-based cocktails, while next door, Tiendita will offer Chef Gaytán’s Mexican heritage flavors on-the-go, with quick-service Mexican street-food staples.

We’ve been talking about what’s to come, and of course, there is so much to enjoy now! A favorite new spots to relax and listen to music is at the Downtown Disney LIVE! stage and lawn. Get ready to ignite your taste buds with flavor because Lunar New Year is almost here at Disneyland Resort! This year is the Year of the Dragon and the culinary teams have brought out the creativity to bring you delicious delights inspired by the traditions and cuisines of Chinese, Korean, and Vietnamese cultures. From Jan. 23 through Feb. 18, the Lunar New Year Festival will transform Disney California Adventure park into a vibrant celebration with characters, entertainment, festive décor, merchandise, and, of course, food!

As we celebrate this new year, there are plenty of treats and eats across the resort for you to try. From returning favorites, like the Mickey-shaped Hot Dog Bun and Garlic Noodles, to can’t-miss new additions, such as the Fried Lemongrass Chicken Dumplings and Peach Basil Collins, you’ll be satisfied (and full) by the end of your foodie outing. But that’s not all. There are bites and sips beyond just the festival offerings for you to indulge in, and I’ve got them all for you here.

Grab your creativity (and your appetite) because the EPCOT International Festival of the Arts is kicking off in just a couple weeks. Starting Jan. 12 through Feb. 19, EPCOT will embrace the arts in all forms, from music to cuisines, and fill the park with plenty of dazzling experiences to enjoy.

With 18 Food Studios filled with expertly crafted bites and delights from our talented teams of chefs and mixologists, your taste buds are about to be brought to life with the culinary arts! This year, there are multiple returning favorites, like the Red Wine-braised Beef Short Rib and Deconstructed Key Lime Pie, as well as soon-to-be premiering dishes, like the Neapolitan Dessert Trio and Grilled Pork Belly. As you eat your way around the World Showcase, be sure to pick up a Festival Passport to take part in the Wonderful Walk of Colorful Cuisine, a returning food stroll featuring culinary delights. With each bite, collect stamps by purchasing five of these decadent dishes to redeem a special prize from Deco Delights to enjoy.

Chocolate and peppermint are the perfect combination this time of year! My favorite part of this recipe is that the cookies can be made up to three weeks in advance and frozen for those days where you suddenly need cookies for a last-minute party. These cookies are part of Disney’s Contemporary Resort gingerbread display offerings, and a lovely treat to snack on while enjoying the display. The Foodie Guide to Gingerbread Displays is full of yummy treats to try while looking at this year’s gingerbread displays.

CHOCOLATE PEPPERMINT COOKIES

Disney’s Contemporary Resort

Makes 24 Cookies

CHOCOLATE PEPPERMINT COOKIES

6 ounces chopped semi-sweet chocolate

1 1/2 cups all-purpose flour

1/4 cup cocoa powder

1 teaspoon espresso powder

1 teaspoon baking powder

1/2 teaspoons salt

3/4 cup unsalted butter, softened

1 1/4 cups granulated sugar

2 eggs

1 teaspoon vanilla extract

1 teaspoon peppermint extract

3/4 cup mini chocolate chips

TOPPING

4 ounces chopped semi-sweet chocolate

1/2 cup crushed candy cane pieces

FOR CHOCOLATE PEPPERMINT COOKIES:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper or silicone baking mat and set aside.
  2. Melt chopped semi-sweet chocolate in microwave, stirring after every 30 seconds until smooth. Set aside.
  3. Whisk all-purpose flour, cocoa powder, espresso powder, baking powder, and salt in a medium bowl and set aside.
  4. Cream butter and sugar in the bowl of an electric mixer fitted with a paddle attachment until fluffy. Add eggs, vanilla extract, and peppermint extract and beat on medium speed until just combined. Add melted chocolate and beat on low speed until combined.
  5. Slowly add reserved flour mixture. Beat until incorporated. Fold in chocolate chips.
  6. Using a 1 tablespoon scoop, place 12 balls of dough on prepared baking sheet. Refrigerate remaining dough while baking.
  7. Bake for 9-11 minutes, until cookies begin to crinkle on top. Cool for 5 minutes on baking sheet, then transfer to wire rack to cool completely before decorating.
  8. Repeat with remaining dough.

TO SERVE:

  1. Melt chopped semi-sweet chocolate in microwave, stirring after every 30 seconds until smooth. Set aside
  2. Using a fork, drizzle melted chocolate over cookies and sprinkle crushed candy canes on top.

Cook’s Note: Chocolate Peppermint Cookies can be made up to 3 weeks in advance and frozen in an airtight container. Bring to room temperature before serving.

MELTED SNOWMAN SUGAR COOKIES

Makes 18 Cookies

SUGAR COOKIES

2 1/2 cups all-purpose flour

2 teaspoons baking powder

3/4 teaspoon salt

1 cup unsalted butter, room temperature

1 1/4 cup granulated sugar

1 egg yolk

1 egg

1 teaspoon vanilla extract

MELTED SNOWMAN TOPPINGS

9 large marshmallows

1/2 cup dark melting chocolate

1 (12 ounce) bag white melting chocolate

36 chocolate twigs

18 orange sprinkles

54 chocolate covered cocoa nibs

18 chocolate top hats

FOR SUGAR COOKIES:

  1. Preheat oven to 325°F. Line a baking sheet with parchment paper or silicone baking mat and set aside.
  2. Whisk flour, baking powder, and salt together in medium bowl; set aside.
  3. Cream butter and sugar in the bowl of an electric mixer fitted with a paddle attachment until light and fluffy.
  4. Add egg yolk, egg, and vanilla and beat on medium speed until combined. Reduce speed to medium and slowly add flour. Mix until soft dough forms.
  5. Using a 3 tablespoon scoop, place 6 balls of cookie dough on prepared baking sheet. Refrigerate remaining dough until ready to bake next batch of cookies.
  6. Bake for 12-14 minutes, until edges begin to brown. Cool for 5 minutes on pan. If desired, even out the edges of the cookies with a round cookie cutter, slightly smaller than cookies while cooling.
  7. Move to wire racks and cool at least 30 minutes before decorating.
  8. Repeat with remaining dough.

TO SERVE:

  1. Cut large marshmallows in half. Place on wax paper, sticky side down. Melt dark melting chocolate according to package instructions. Use a toothpick to paint two eyes on the side of each cut marshmallow. Set aside to dry.
  2. Melt white melting chocolate in microwave according to package instructions. Place 1-2 tablespoons of melted white chocolate on top of one cookie. Smooth to desired shape. Place one marshmallow face on the cookie and decorate with 2 chocolate twigs for the arms, 1 orange sprinkle for the nose, and 3 chocolate covered cocoa nibs for the buttons. Repeat with remaining cookies.
  3. Attach hats to the top of each snowman by dipping bottom of hat into melted dark chocolate and place on top of marshmallow.

Cook’s Note: Chocolate twigs, chocolate-covered cocoa nibs, and hats can be found at specialty stores. Thin pretzel sticks, mini chocolate chips, and peanut butter cups make great substitutes for specialty items. If desired, sugar cookies can be rolled in red and green sprinkles before baking for a more festive look.

SNICKERDOODLE COOKIES MADE WITH

SNICKERS BAR PIECES

EPCOT International Festival of the Holidays

Makes 24 Cookies

INGREDIENTS

2 3/4 cup all-purpose flour

1 teaspoon baking soda

2 teaspoons cream of tartar

1/2 teaspoon salt

1 cup shortening

1 1/2 cup, plus 2 tablespoons sugar, divided

2 eggs

2 teaspoons ground cinnamon

2 cups roughly chopped SNICKERS bar pieces

1/2 cup semi-sweet chocolate chips, melted

FOR SNICKERDOODLE COOKIES:

  1. Sift flour, baking soda, cream of tartar, and salt in a medium bowl; set aside.
  2. Cream shortening and 1 1/2 cup sugar in the bowl of an electric mixer fitted with a paddle attachment until fluffy. Reduce speed to medium and add eggs, one at a time, until combined.
  3. Add reserved flour mixture, one cup at a time, scraping bowl as needed.  Beat on medium speed until just combined.
  4. Roll dough into balls using a 1-1/2 inch cookie scoop and refrigerate for 15-20 minutes.
  5. Preheat oven to 350°F. Line a baking sheet with parchment paper or silicone baking mat.
  6. Combine remaining 2 tablespoons sugar and ground cinnamon in a small bowl. Set aside until ready to use. Place chopped SNICKERS bar pieces in a medium bowl and set aside.
  7. Remove 12 chilled dough balls from refrigerator. Roll in cinnamon sugar and place on prepared baking pan.
  8. Bake for 8 minutes. Carefully remove from oven and sprinkle 1 tablespoon chopped SNICKERS bar pieces on top of each cookie. Return to oven and bake for an additional 5-8 minutes until edges begin to brown. Cool on pan for 2 minutes before moving to wire racks. Drizzle with desired amount of melted dark chocolate.
  9. Repeat with remaining dough.

Cook’s Note: If you’re working in a warm or humid environment, place SNICKERS bars in refrigerator before chopping to keep chocolate from melting.

BOURBON-EGGNOG SNOWFLAKE COOKIES

Disney Springs

Makes 24 Cookies

NUTMEG COOKIE DOUGH

2 1/4 cups all-purpose flour

1/2 cup confectioners’ sugar

1 teaspoon fine sea salt

1 teaspoon ground nutmeg

1/2 teaspoon vanilla extract

1 cup unsalted butter, softened and cubed

BOURBON-EGGNOG ICING

2 cups confectioners’ sugar

4-6 tablespoons eggnog, divided

1 tablespoon bourbon (optional)

ROYAL ICING

2 cups sifted confectioners’ sugar

1 1/2 tablespoons meringue powder

3 tablespoons water, divided

FOR NUTMEG COOKIE DOUGH:

  1. Combine flour, confectioners’ sugar, salt, and nutmeg in the bowl of an electric mixer fitted with a paddle attachment. Beat on low speed for 1 minute. Add butter, one piece at a time. Continue beating until a soft dough forms.
  2. Turn dough onto lightly floured surface and shape into a disk. Wrap in plastic and refrigerate for 30 minutes.
  3. Preheat oven to 325°F. Line 2 baking sheets with parchment paper and set aside.
  4. Roll chilled dough on lightly floured surface to 1/8-inch thickness. Cut using a 3-inch snowflake cookie cutter. Place 12 snowflake cookies on each baking sheet and bake for 13-15 minutes, until edges are light brown.
  5. Cool completely on pans. Move to wire racks before decorating.

FOR BOURBON-EGGNOG ICING:

  1. Whisk confectioners’ sugar, 4 tablespoons eggnog, and bourbon (if using) in a small bowl. Add additional eggnog, one 1 tablespoon at a time to reach desired consistency.
  2. Dip cooled cookies in glaze. Rest cookies for 30 minutes, until icing sets, before decorating.

FOR ROYAL ICING:

  1. Combine confectioners’ sugar, meringue powder, and 1 tablespoon water in the bowl of an electric mixer fitted with a paddle attachment. Beat on low speed until just combined. While mixer is running add remaining two tablespoons of water, one tablespoon at a time.
  2. Increase speed to medium and beat for 7-10 minutes until icing has a matte finish.
  3. Place in piping bag fitted with desired tip. Outline each snowflake cookie with royal icing.

Our final recipe for National Cookie Day is from the Disney Recipe Vault. The first time I made these, I was thrilled that they were a cutout cookie that didn’t require chilling time. This comes in handy when there is a last-minute request for cookies. Snowman Shortbread Cookies

Disneyland Resort

Makes 30 Cookies

SHORTBREAD

2 3/4 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1 cup unsalted butter, softened

1 1/2 cups sugar

1 egg

1 1/2 teaspoons vanilla extract

1/2 teaspoon almond extract

TOPPING

1 pound white chocolate bark

Red and green sprinkles

FOR SHORTBREAD:

  1. Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
  2. Mix flour, baking powder, and salt in medium bowl. Set aside.
  3. Cream butter and sugar in bowl of electric mixer fitted with paddle attachment until fluffy. Add egg, vanilla extract, and almond extract and mix on medium speed for 1 minute.
  4. Add flour mixture, 1 cup at a time until combined.
  5. Divide dough into two balls.
  6. Roll one ball of dough into 1/8-inch thick rectangle on floured surface. Dip (3 1/2-inch tall, 2-inch wide) snowman cookie cutter into flour and cut cookies. Transfer to prepared baking sheets.
  7. Bake for 9-11 minutes, until edges begin to brown.
  8. Cool on wire racks. Repeat with remaining dough.

To Serve:

  1. Place white chocolate bark in a microwave-safe bowl. Cook on 50% power for 20 seconds. Stir and repeat until white chocolate is melted.
  2. Dip tops of cookies in melted white chocolate and top with sprinkles.

Ariana DeBose Dazzles at Disneyland Paris

Academy Award®-winning actress Ariana DeBose appeared under the stars in front of Sleeping Beauty Castle at Disneyland Paris to perform “This Wish” from Disney Animation’s “Wish.” The performance features breathtaking castle projections, fountains and “Wish”-themed drones lighting up the night sky. Tune in to “The Wonderful World of Disney: Magical Holiday Celebration” airing on ABC this Sunday, Nov. 26 at 8 p.m. ET and streaming next day on Hulu and Disney+ to see the full performance and for an enchanting special glimpse of “Wish.”

Asha Meets Guests Around the World

At EPCOT at Walt Disney World Resort, guests have been dreaming big with Asha in a special location near the entrance to World Showcase. Beginning today, Asha makes her way to Disneyland Resort, where she will appear outside the Royal Hall in Fantasyland, bringing with her a touch of the magical kingdom of Rosas as Star’s playful glow lights up the area. Asha will head to Animation Celebration at Walt Disney Studios Park at Disneyland Paris starting Nov. 29.

“Wish” Lights up the Night from Coast to Coast

For a limited time, a new water short called “This Wish” will be presented ahead of “World of Color – Season of Light” at Disney California Adventure park at the Disneyland Resort. When the lights dim around Paradise Bay, Asha and Star take guests on a journey set to the song “This Wish” from the film. Animated projections, majestic fountains synchronized to music, dazzling lasers and sparkling lighting effects magically combine to tell the story of how stars can guide, inspire and remind us to believe in possibility.

Starting today, Spaceship Earth will illuminate the EPCOT sky at Walt Disney World Resort with special colors and lights featuring the brand-new song “I’m a Star” from Disney Animation’s “Wish.”

Wishful Dining Experiences

Disneyland Hotel at Disneyland Paris will celebrate royal stories upon its reopening on Jan. 25, and this also includes Disney Animation’s latest release “Wish”! Inside the Royal Banquet restaurant, guests will be invited to attend a royal feast in a gallery of paintings portraying numerous Disney royal families and their famous chefs. But that’s not all! Evil royalty will also make its way as they will take over one of the spaces called the antechamber. Being the most powerful person in the kingdom of Rosas, the charming and confident King Magnifico from “Wish” will rightfully take his place among the cast of villainous portraits, including the Queen of Hearts from “Alice in Wonderland” and Prince John from “Robin Hood.”

Walt Disney World Resort has some treats for guests that are a wish come true! Starting today, visit Amorette’s Patisserie at Disney Springs for the Wish Salted Caramel Hot Cocoa. Check out the Contempo Café at Disney’s Contemporary Resort for the Ready to Sparkle cookie. And, try out the refreshing So Many Wishes drink found at a variety of locations throughout the resort. Beginning Nov. 24, guests taking part in the Holiday Cookie Stroll at EPCOT International Festival of the Holidays presented by AdventHealth can redeem the Star Cookie from the Holiday Sweets & Treats Holiday Kitchen after they collect all five Holiday Cookie Stroll stamps in their Festival Passport.

Starting Nov. 29, Disneyland Paris guests can indulge in the delicious Twinkle, Twinkle Treat. Decadently put together with passion fruit and milk chocolate atop a coconut biscuit and served with mango coulis, this dessert is a must order only at Walt’s – an American Restaurant.

A Valentino popcorn bucket and Star sipper based on characters of the same name from “Wish” will be available at select locations throughout the Disneyland Resort in California, Walt Disney World Resort in Florida and on Disney Cruise Line ships. Limited to two per person, per transaction while supplies last.

Roll out the Red Carpet at Shanghai Disney Resort

In celebration of Disney’s 100th anniversary, the China premiere of “Wish” was held at Shanghai Disney Resort on Nov. 17. A glamorous red carpet was held in Disneytown where leading Chinese celebrities and vocal talent for the Chinese language version of the film wowed the crowd. As the evening ended, guests were treated to a special show in Shanghai Disneyland as Enchanted Storybook Castle was illuminated with a Disney 100 and “Wish”-themed projection show, setting the night sky ablaze with fireworks paying homage to the creative spirit that Disney has carried forward for a century.

Shine like a Star with Disney PhotoPass

Beginning today, guests at Disneyland Resort, Walt Disney World Resort and Disney Cruise Line can wish upon a star with a new Disney PhotoPass Magic Shot featuring Star from “Wish.”

For guests visiting Disneyland Paris or onboard a Disney Cruise Line ship, be sure to take advantage of this Magic Shot that includes both Star and Valentino from “Wish.” And now through Nov. 30, 2023, Disneyland Resort Magic Key holders can enjoy it, too. Look for the Magic Key sign across from Matterhorn Bobsleds at Disneyland park.

Learn to Draw like a Disney Artist

For a limited time, guests can celebrate “Wish” by learning how to draw select characters from the film at Animation Academy in Disney California Adventure park at the Disneyland Resort, the Animation Experience at Conservation Station at Disney’s Animal Kingdom park at Walt Disney World Resort and Animation Academy at Walt Disney Studios Park at Disneyland Paris. The activity is offered under the guidance of a talented artist, and for participants at Disney California Adventure park, an audio-visual introduction from the new film’s heads of animation, Becky Bresee and Wayne Unten at the Walt Disney Animation Studios, will precede the activity.
