This February with Celebrate Soulfully, we are commemorating Black History Month with experiences that honor Black heritage and culture through music, food, art and more.
Meet Kima and Twon, two Disney Springs culinary cast members who are sharing a piece of their heritage with dishes they have created for this celebration.
Growing up in Colorado Springs, Kima always looked forward to her family gatherings on Sundays, when Grandma took over the kitchen with the spices of her Jamaican and Puerto Rican roots. Kima’s favorite was the jerk chicken and that’s what inspired her to create the Jamaican Jerk Chicken Frites at The Daily Poutine. Made of sweet ‘n’ hot jerk marinated chicken, pineapple salsa, scotch bonnet aioli and fries, the dish is a nod to her grandma – a tribute to the person that shaped her love for food.
“I started cooking when I was about 5 years old,” remembers Kima. “The first thing I learned how to cook was mac and cheese and collard greens and I’ve been cooking ever since.”
Food has always been an important part of her life and her culture, and that’s what drove her to pursue a career in the culinary arts.
Being an only child, Kima appreciates her Disney family, who have contributed to her growth over the past 14 years of her Disney career and celebrate her accomplishments. And this is only the beginning for Kima, who has many more goals to conquer here at Disney!
As the oldest of 12 siblings growing up in Orlando, Florida, Twon spent a lot of time in the kitchen. With so many siblings, his parents worked, sending Twon to the kitchen at the young age of 10 to cook for his family. One of those family dishes of his youth inspired the Chicken Jambalaya Dog he created for B.B. Wolf’s Sausage Co.
“As I got older, I added my own flair to it, and I found out that it’s a generational thing. My grandmother made it for my mom, then my mom made it for us, and now I’m so excited that guests at Disney Springs get to try a piece of my heritage.” His version of the dish is a combination of smoked sausage, roasted corn and lemon caper aioli served on a Tuscan roll.
One of the things Twon enjoys the most about cooking is watching people’s reactions when taking that first bite of a dish he has prepared. And serving his food to guests who visit Disney Springs from around the world, has given him the perfect stage to hone his craft.
“To be honest, Disney refined me in the culinary field. I’ve learned how to be organized, make sure that my flavors are on properly and how to build new flavors. I’ve grown so much with this company, and I feel my skills are at a place I never thought they would be.”

Can we tell you how excited we are that the Vibrante & Vívido: Encanto Cocina Food Studio is back? With lively, rich and colorful dishes full of flavors, this is the place to experience different cuisines inspired by South America and the Disney animated film “Encanto.”
Located between Morocco & France, this Food Studio features a chorizo and potato empanada with turmeric and annatto aïoli; a spicy ajiaco soup with guajillo and árbol chili-spiced chicken, potato, avocado, corn and crème fraîche (gluten/wheat-friendly). For dessert, there’s a passion fruit mousse with dragon fruit jam. Yum! In addition, you can find beverages like a coconut and passion fruit smoothie (non-alcoholic), a frozen piña colada and a passion fruit daiquiri.
Another favorite Food Studio is El Artista Hambriento near the Mexico pavilion. It’s a fiesta of flavors and features one of my favorite desserts: coconut flan! You can also enjoy dishes like carne asada with chipotle-marinated beef sirloin, sweet potato purée and crispy-fried onion; huarache de champiñones made with guajillo chile and corn masa huarache with pinto beans, oyster mushrooms, nopales,queso fresco and pea tendrils; and of course, my favorite, the flan de coco with guava sauce and whipped cream.
To drink, you have great options like Cielito Lindo artisanal Mexican craft beer; the Bombon Margarita “Marshmallow” with Ilegal Mezcal Reposado, marshmallow cordial, lime juice, agave nectar and a hint of coffee and elderflower served with a toasted marshmallow; and Las Californias, made with Tromba Blanco tequila, strawberry-lime purée and Las Californias Citrus Mexican Gin.
Besides the culinary arts, the EPCOT International Festival of the Arts also showcases the performing arts. On select dates, you can catch performances by Mexican-American Broadway star Mandy González (“Aida”) and L. Steven Taylor (“The Lion King”) as part of the amazing DISNEY ON BROADWAY Concert Series. In addition, Peruvian harpist Victor Espinola performs at the festival. Check the My Disney Experience app for daily show times.
The EPCOT International Festival of the Arts is included with valid theme park admission and a park reservation for the same date. There is nothing lovelier than springtime at Walt Disney World! The days get longer, the weather warms up, and colorful flowers bloom across the landscape. And one of the best places to experience spring for yourself is at the EPCOT International Flower & Garden Festival. Beginning March 1 and continuing through July 5, this stunning festival features alluring gardens, whimsical topiaries, lively entertainment, beautiful merchandise and delightfully fresh cuisine.
Today, we have exciting news to share. For the first time, topiaries of Mirabel, Antonio, Isabela and Luisa from Disney’s “Encanto” will make a grand appearance at the festival. Located near the EPCOT main entrance, these new topiaries are sure to be a must-do photo moment to mark your visit. (But remember: We don’t talk about Bruno.)
And that’s not all. A new Princess Tiana topiary will grace The American Adventure. Plus, we also have returning favorites such as Snow White & the Seven Dwarfs; Peter Pan, Tinker Bell, Captain Hook and Tick Tock Croc; Figment; Anna and Elsa; and more.
The popular Garden Rocks Concert Series is back, featuring favorite tunes at the America Gardens Theatre. More details about the musical lineup will be released soon on the Disney Parks Blog.
Get your taste buds ready; you’re in for a treat! More than 15 Outdoor Kitchens will offer specialty menus of scrumptious cuisine and beverages. One of my favorites is The Citrus Blossom which will move to a new location at Odyssey. With fresh new menu items, you’ll want to sample all the mouth-watering delights.
Of course, you can commemorate your visit with official ‘70’s inspired Orange Bird merchandise, including apparel, headwear, drinkware and much more.
Spike’s Pollen-Nation Exploration will have people abuzz again. This springtime scavenger hunt is fun for all ages. Follow Spike the Bee on his pollination trail, where he will “bee” busy collecting nectar and pollinating gardens at EPCOT. Once you find him in each garden on your map, add the corresponding sticker of the plant he is visiting.
On the bridge to World Showcase, you can enjoy the sights and scents of spring with Blossoms of Fragrance presented by Scentsy. Surrounded by vibrant butterfly topiaries, guests will be invited to follow their noses to six scent stations—to form lasting memories with the help of unforgettable aromas.

When I started writing theme park dining blogs, I never expected to be attending an Agave Tasting event run by experts in tequila. Still, on the evening of November 2nd, 2022, I got that chance. To make my appearance at this event even more unlikely, I do not drink tequila or mezcal. Due to this, some special arrangements were made so that I could hear from the tequila experts about the process of making the beverage. Frontera Cocina, in Disney Springs, offered this event. According to their social media, the event sold out in 12 hours. On their social media, they wrote, “Our Agave Tasting for Día de Muertos sold out in less than 12 hours!! This motivates us to continue doing these amazing events. Thank you 🖤.” Based on the response I saw and the enjoyment by guests, I suspect this type of event will happen many more times.
Our tequila experts, Hilda and Humberto, walked us through the making of tequila. Hilda, a tequila expert primarily working at La Cava de Tequila, told us about the making of tequila. She stressed that Agave Azul serves as the only plant for creating this drink. Humberto described living in Tequila, Mexico. He told fascinating stories about the culture of creating this beverage. Though they both acknowledge that the creation process of tequila has changed with the introduction of more technology, the core process remains the same.
This evening, each diner received three portions of tequila and one serving of mezcal once seated at your table. The staff provided me with a diet soda. Then, they offered me a non-alcoholic “liar” beverage. When we arrived, they offered a drink and a sampling of an appetizer as we moved to the back porch area of Frontera Cocina for this event. The tasting event also included some well-prepared Mexican food to balance the experience in between the beverages.
If interested in the process of creating tequila, keep a close watch on Frontera Cocina’s social media for the next event. The explanations by Hilda and Humberto were marvelous. The appetizers provided showed off the Rick Bayless Mexican food style. Dining on the back porch on a nice evening added to this experience. The $112 price tag might look high. However, this event sold out in 12 hours. Overall, I think if you want to know more about tequila, this event would be well worth it based on the food, beverage, presenter’s knowledge, and service. Though the tacos are wonderful here, this food and drink exceed that level. This event made a great way to celebrate “Dia de Meurtos.” As always, eat like you mean it!

In July, there are a few celebrations happening and some summer flavors to try across the resort. To celebrate the anniversary of Disneyland Resort, this year there are plenty of delights the whole family will love. And what better way to commemorate a birthday than with food! Now through July 17 at Disney’s Grand Californian Hotel & Spa, there are plenty of desserts to indulge your taste buds. At GCH Craftsman Grill, you’ll uncover the Mickey-shaped Chocolate Donut, a tasty Mickey-shaped chocolate donut, and the Disneyland Birthday Cupcake, a vanilla cake with sprinkles and frosting.
You simply must check out the GCH Holiday Cart, located in the lobby, as well, because it has plenty of items for the anniversary excitement, including the Birthday Cookie Box filled with assorted cookies, the Mickey Shorts Sugar Cookie, and Birthday Cake S’mores Cookie with marshmallow filling.
If you’re a whoopie pie fan, you must treat yourself to Mickey-shaped Whoopie Pie, a chocolate Mickey-shaped delight with buttercream filling. If you love cake, then the Birthday Cake Layered Cake Pop is right up your alley. This item is adorable and features layers of confetti cake with colorful buttercream filling in honor of the mouse himself. The Holiday Cart will also be offering a Birthday WaffleShot that can be enjoyed with your choice of a variety of milks or alcohol, for those over 21.
For a limited time on July 17, the anniversary of Disneyland Resort, Red Rose Taverne at Disneyland park will be serving up the brand-new Walt’s Chili Cheese Fries. This entrée will feature seasoned fries topped with Walt’s signature chili, cheddar cheese, and green onion. Just take a peek at how good they look!
Let’s take a look at the novelties, too! The Birthday Mickey Ear Hat Bowl is another great way to join in on the birthday festivities. At Disneyland park, this bowl can be found at Gibson Girl Ice Cream Parlor. Over at Disney California Adventure park, Award Wieners will be offering up their mouthwatering Peaches and Cream Funnel Cake Fries in this adorable dish. The only thing that could make these funnel cake fries better is being served in the Mickey Ear Hat.
Mighty Thor’s Hammer is quite the unique piece. This novelty opens up on top to hold a contour bottle or cup and includes your choice of a Coca-Cola bottled beverage when your purchase it. This mighty must-have can be found in Disney California Adventure park at Shawarma Palace, Shawarma Palace Too, and the Outdoor Vending Cart at the entrance to Avengers Campus near Guardians of the Galaxy –Mission: BREAKOUT!
From July 18 through 20, Star Wars: Galaxy’s Edge will be celebrating the birthday of everyone’s favorite cantina owner –Oga Garra. To honor her, treat your taste buds to some yummy options that can’t be missed. At Oga’s Cantina, there are a few items to try. For beverages, the Blue Citrus Mule features citrus vodka, blue curaçao, pure cane syrup, mule mix, and club soda garnished with a lime wheel and candied ginger and the non-alcoholic Pasaana Punch includes orange juice, white grape juice, red passion fruit, and hibiscus– how refreshing!
If you’re looking for a snack at Oga’s Cantina, the Mygeeto Roll has tuna poke, zhu cucumber, green onion, enoki, eel sauce, fried garlic, vermicelli, and sea bean rolled in rice paper and garnished with ponzu foam.
At Docking Bay 7 Food and Cargo, you’ll find the tasty Blue Milk Chia Pudding. This treat is made with a coconut milk and chia seed blend, fresh berries, pepitas, and shredded coconut. For a sweet and savory combination, Jat Kaa’s Coolers has Peka Wheat Gear Puffs, crispy wheat puffs in a savory and spicy seasoning blend. I don’t know about you, but these all sound incredible!
Downtown Disney District also has some foodie fun for you with summer flavors coming to both Salt & Straw and Sprinkles. Salt & Straw will be having a Berry Series featuring fresh flavors of marion berry, blackberry, wild berry, boysenberry, and raspberry. What a perfect way to celebrate summer.
Sprinkles will be having various seasonal flavors coming up. From July 11th through July 24th, the Circus Animal birthday cake cupcake features pink sugar cookie crust, topped with strawberry buttercream frosting, and finished with rainbow nonpareils and an animal cookie. From July 25 through August 7, indulge in the Cookie cupcake, a chocolate chip studded yellow cake lined with a cookie crust and topped with brown sugar frosting and dusted with cookie crumbles.

We are very excited to share that starting today, the Disney California Adventure Food & Wine Festival is back at the Disneyland Resort, bringing culinary delights with a Disney twist! This limited-time event, filled with lots of foodie fun for the whole family, runs through April 26, 2022.
Let’s start our tour with a dozen different outdoor Festival Marketplaces, where you can sip and savor your way through tantalizing small plates and innovative beverages. Each location is inspired by fresh, California-grown ingredients like avocados, citrus, strawberries, peppers and artisanal cheese. You can also discover a variety of craft beers and wines from all across the Golden State. Plant-based, allergy-friendly, gluten-friendly and kid-friendly dishes are also available to please a variety of palates.
For a great value on this epicurean adventure, you may choose to purchase the Sip and Savor Pass,* which gives you eight opportunities to try a variety of items at participating locations throughout Disney California Adventure park. Be sure to also pick up a Tasting Passport, to check everything on the list!

Learn cooking tips and tricks during complimentary culinary demonstrations, as Disney chefs and visiting chefs showcase their talents by preparing their favorite recipes on stage, weekends throughout the festival.
You may even choose to partake in bookable signature events to expand your knowledge on wine, beer and spirits with seminars at Sonoma Terrace or at Carthay Circle Winemaker Receptions. When you’re ready to take a little breather, the cooking-themed fun continues! Catch live entertainment such as Chip ‘n’ Dale and the Jammin’ Chefs drumming up new beats, visit with Chef Goofy, do craft activities and visit the new “Alice’s Wonderland Bakery Unbirthday Party,” where children ages 3 through 11 can have a sweet time decorating cupcakes.*** Visit the Disneyland app**** for details and show times.
Adding to this bountiful celebration, Soarin’ Over California is returning to Disney California Adventure park for a limited time. This epic, aerial adventure takes you gliding over the Golden State’s natural and man-made wonders, from the iconic Golden Gate Bridge to the crashing waves of Malibu. Its immersive, 80-foot projection dome simulates the graceful motion of flight and teases the senses with notable scents found throughout California!
While you’re here, you may want to scoop up a few foodie mementos including special festival apparel, kitchenware, artwork and collectibles.
Hungry for more? Over in the Downtown Disney District, you can enjoy Friends of the Festival menu items at nine participating restaurants, special tasting events, crafts, live musical entertainment nightly on the Downtown Disney LIVE! Stage, and weekend artist signings at WonderGround Gallery. Making it even more colorful and festive, look for the chalk artists doing beautiful work in the Downtown Disney District, at the Disneyland Hotel and at the Paradise Gardens Gazebo in Disney California Adventure park. At the Hotels of the Disneyland Resort, more Friends of the Festival tastings and education experiences are available to the public. This includes food and beverage pairings featuring Golden Road Brewing, Peltzer Family Cellars and sake from Nova Brewing Co. at GCH Craftsman Bar at Disney’s Grand Californian Hotel & Spa. The Disneyland Hotel is presenting a mixology seminar at Trader Sam’s Enchanted Tiki Bar, as well as a lovely outdoor winemaker reception with culinary action stations, featuring Silver Oak/Twomey wines. Many of California’s communities and regions are highlighted in the Disney California Adventure Food & Wine Festival’s smorgasbord of dishes. A dozen Festival Marketplaces will serve irresistible small bites and beverages, and dining locations across Disney California Adventure park – including Pym Tasting Lab and Terran Treats at Avengers Campus – will also feature special festival menu items. You may even choose to purchase a Sip and Savor Pass* for eight coupons redeemable for select food and nonalcoholic beverages at participating locations.
The Hollywood Backlot in Hollywood Land will be home to an appetizing assortment of entertainment and presentations for all ages. The all-new animated series, “Alice’s Wonderland Bakery,” which debuted on Disney Junior yesterday, is the inspiration behind a new, limited-time festival experience for junior chefs at the Hollywood Backlot Stage. During “Alice’s Wonderland Bakery Unbirthday Party,” kids ages 3 through 11 will have the opportunity to express their creativity through hands-on cupcake decorating. Space is limited, and participant sign-ups begin 45 minutes before each show time.
At the Hollywood Backlot, you may also encounter Chef Goofy or dance along with Chip ‘n’ Dale as the Jammin’ Chefs serve up tasty new rhythms using pots and pans.
On Saturdays and Sundays, be sure to catch a culinary demonstration at the Hollywood Backlot Stage! A diverse lineup of Disney and visiting chefs will prepare their favorite dishes and share insider tips for making mouthwatering meals at home.
Of course, be on the lookout for a new line of Disney California Adventure Food & Wine Festival merchandise.
Downtown Disney District and the Hotels of the Disneyland Resort will also join the gastronomic festivities, with select restaurants offering special menu items and events for a limited time.
And here’s the cherry (or should I say “citrus”?) on top: Soarin’ Over California will return to Disney California Adventure park for a limited time during the Disney California Adventure Food & Wine Festival, beginning March 4! Once again, you can relish the unforgettable sights, sounds and scents of the Golden State aboard this high-flying attraction.
